A few minutes later, I went back for another…and another…and another. The first time I made it, I served myself a small scoop. This cauliflower mac and cheese is surprisingly addictive. You won’t find any “mac” here, and you won’t find any “cheese.” What you will find is a whole bunch of cauliflower coated in a gooey, oozy vegan cheese sauce and baked with crispy panko breadcrumbs on top. It’s delicious, comforting, and completely ironic. Remove from the oven, and let cool for around 10 minutes.I don’t think recipes can get more fun than this cauliflower mac and cheese. If they’re still a bit hard, cook for around 10 more minutes. If the potatoes are tender, remove from the oven. Once the 50 minutes are up, place a fork into the lasagna.Add additional Daiya Monterey Jack Style Block on top, and bake in the oven for 50 minutes. Lastly, add the Daiya Monterey Jack Style Block (I shredded this using a shredder). Next, add the vegan ground beef & marinara sauce.Once they are layered along the bottom, spread a later of the cashew ricotta on top, covering the sweet potato disks.Start by adding the sweet potato disks in rows, slightly overlapping the one before them.Grab a baking pan (I used a 9×13) and grease the bottom and sides with cooking oil (just so nothing sticks). Once they are chopped, it is time to assemble the lasagna.Let them cook together for 5-6 minutes until everything is heated through. Next, add the entire jar of marinara and vegan ground beef to a skillet over medium heat.Remove from the blender, and set aside.The texture should look like a thick, spreadable cheese! If it’s too thick, add a bit more water. Daiya Monterey Jack Style Block – This is one of my favorite non-dairy cheeses since it tastes so close to real dairy.Cashew ricotta – A super easy cheesy spread made out of a nut base.Vegan ground beef – Any brand works, I typically find this in the frozen section with the other meatless items.Marinara sauce – Something you can buy anywhere!.Here, it only takes up a few ingredients to bring together this delicious dish: One of the best things about this sweet potato lasagna is that it takes less time since there are no noodles to boil ahead of time, and all of the ingredients are really simple. It’s healthier, lower carb, and PERFECT for thanksgiving and the holiday season! Plus, you’re getting in an extra serving of veggies in every bite. So I thought, why not try a potato lasagna? While you all know I’m a pasta girl at heart, sweet potato lasagna is *highly* underrated. I’ve grown to realize that it’s a dish that everyone puts their own spin on, and can be done in so many amazing ways. Growing up, I ate a lot of lasagna coming from an Italian family LOL (anyone else?). It’s cozy, filling, and one of the ultimate comfort foods.
